Cabbage Vegetable Soup ~

 

There's nothing like a good soup on a cold day! Flavorful and yummy, this Cabbage Vegetable Soup is a delicous way to warm you up. Besides that, it's also a super easy way to receive more vitamins, minerals, and antioxidants. Bonus ~ the ingredients are inexpensive and it's easy to make.

 

Ingredients:

 

1 Tbsp avocado oil (or olive oil*)

1 medium yellow onion, diced

2 cloves of garlic, minced

1 teaspoon paprika

6 cups vegetable stock

2 carrots, peeled and sliced into 1/2-inch slices

3 medium stalks of celery, sliced into 1/2-inch slices

1/2 head cabbage, shredded

2 medium potatoes, peeled and diced

3 teaspoons  Himalayan pink salt

1 (15oz) can of navy beans, drained and rinsed

3 Tbsp fresh dill, finely chopped

Fresh ground pepper to taste

 

Directions:

 

In a large Dutch Oven heat avocado oil over medium heat.

Add onion and cook until just starting to get soft.

Add the garlic and stir constantly for about 30 seconds or until fragrant, then add paprika and mix well.

Stir in the carrots, celery and vegetable stock.

Cover pot and bring to a boil.

Once boiling, stir in the cabbage, potatoes, and salt. Partically cover the pot, and reduce heat to a simmer.

Simmer for 10 - 15 minutes or until potatoes are tender.

Add the beans and fresh dill.

Simmer for 5 minutes more, then add fresh ground pepper to taste.

*I recommend using a high quality, organic olive oil because some inexpensive brands use substitute ingredients
