Homemade Lentil Soup ~

I have many favorite soups that bring me comfort on a cold day and this homemade lentil soup is definitely one of them. Packed with fiber and protein, it's super easy-to-make, hearty and delicious. It's a bowl of vegan, gluten-free yumminess that you don't have to be vegan or gluten-free to enjoy!

 

Ingredients:

 

1 Tbsp avocado oil

1 medium yellow onion, diced

2 cloves garlic, minced

1 medium carrot, diced

2 celery stalks, diced

1 Tbsp fresh thyme, chopped

Himalayan pink salt and fresh ground pepper to taste (I like 1/4 tsp of each)

1 cup water

4 cups vegetable stock

1 cup dried lentils,* rinsed (no need to soak)

1 cup fresh spinach, finely sliced

 

Directions:

 

In a large stockpot, heat oil over medium heat.

Add onion, garlic, carrots, celery, thyme, salt and pepper. Stir occasionally until softened, about 5min.

Mix in water, vegetable stock, and lentils.

Bring to a boil. Cover and reduce heat to a simmer. Stir occasionally and cook until lentils are tender and still with shape, about 40min.

Add spinach at the end for about 1min or until it just begins to wilt. Enjoy!

Makes 4 - 6 servings.
