Best Baked Potatoes ~
Who doesn't love baked potatoes? Especially during the colder fall and winter seasons! This is an easy-peasy way to enjoy the best baked potatoes. I've found russet potatoes work best, but you can bake any kind of potato. Potatoes are naturally gluten-free and are a great source of iron, calcium, magnesium, phosphorous, potassium and zinc. They're also a great source of fiber while adding more Vitamin C and B6 to your diet. And did you know that the skin contains the majority of the nutrients and fiber? They're also so versatile, working well with most meats and vegetables.
Ingredients:
Russert potatoes (or other potato of your choice)
Avocado oil*
Fresh ground pepper
Directions:
Preheat oven to 425 degrees.
Wash potatoes very well with a scrub brush.
Pat dry potatoes and place on a cutting board or tray.
Poke each potato all over with fork.
Drizzle avocado oil over each potato and rub the oil to cover the entire potato.
Sprinkle with Himalayan pink salt and fresh ground pepper to taste, ensuring the whole potato is seasoned.
Place on a baking sheet into oven.
Bake for 45 - 60 minutes making sure to turn each potato over halfway through cooking time. (You'll know your potatoes are done when the skin is wrinkly and they're soft on the inside. To check, poke with a fork and if it goes through and comes out easily, it's done.)
Remove from oven and slice open lengthwise. Add your favorite toppings and enjoy!
TIP: The key to making these potatoes so amazing is drying them after washing. It helps to make the skin nice and crispy!
*Alternatively use a vegetable oil of your choice; olive oil also works well.
