When we think of foods high in Vitamin C, we often think of oranges and lemons. This Vitamin C Booster Smoothie is full of vitamin C-rich foods and doesn't contain either one of those. What?! Instead, it contains other fruits and veggies that are super high in this powerful antioxidant. Did you know that kiwi, celery, raspberries, pomegranate juice, kale, spinach, and collard greens, all contain high amounts of Vitamin C? And they're all in this smoothie! This immune boosting smoothie is delish and the addition of chia seeds and cashews also add protein, among their other important health benefits.

 

Ingredients:

 

1 kiwi*

2 celery stalks

1 cup greens combo (kale, spinach and collard greens)**

1/2 cup frozen raspberries (or fresh if you prefer)

1/2 cup pomegranate juice

1 1/2 cups coconut water

2 Tbsp chia seeds

1/4 cup raw cashews

 

Directions:

 

Place all ingredients in a high powered blender and blend until smooth.

Serves 2.

 

* Did you know you can eat the skin of kiwifruit? The California Kiwifruit Commission states on their website, "The kiwifruit skin is completely edible and makes this nutrient-dense fruit even more nutritious! A recent study shows that eating the skin triples the fiber intake compared to merely eating the flesh. And by not peeling the skin, you preserve much of the vitamin C content as well."  So feel free to put the entire kiwi in the blender!

** For the greens combo I like to use kale, spinach and collard greens because they go well together and all have loads of health benefits. However, you don't need to use this particular combination of greens or any combination of greens. If you prefer to use only one green, kale or spinach work well.
