Hearty Vegan Vegetable Stew ~

 

This hearty vegan vegetable stew is a delicious way to warm up on a cold day. Full of vegetable flavor, this nutritious stew is also gluten-free and easy to make; a yummy bowl of comfort on those chilly fall and winter days. Recipe adapted from Hello Little Home. 

 

Ingredients:

 

1 Tbsp avocado oil (or olive oil*)

1 medium yellow onion, chopped

2 large carrots, peeled and sliced into 1/2-inch slices

2 medium stalks of celery, sliced into 1/2-inch slices

1 cup of mushrooms, cut into quarters

2 cloves of garlic, minced

1/4 cup gluten-free flour

2 Tbsp paprika

3 Tbsp tomato paste

2 medium red potatoes, cut into 1-inch chunks

1 cup of frozen cut green beans

2 bay leaves

1 tsp dried thyme

1/2 tsp each dried rosemary and sage**

5 cups vegetable stock

2 cups chickpeas (If you're using dry chickpeas, measure the 2 cups after they've been cooked. If you're using canned chickpeas, be sure to drain and rinse very well.)

1/4 cup parsley, chopped

Fresh ground pepper and Himalayan pink salt to taste

 

Directions:

 

In a large Dutch Oven heat avocado oil over medium heat.

Add onions, carrots, and celery and season with Himalayan pink salt and pepper. Cook for about 5 minutes, or until onions start turning translucent.

Add mushrooms and cook for about 7 minutes, or until most of the liquid from the mushrooms has evaporated.

Stir in the garlic and continue to stir constantly until fragrant, about 30 seconds.

Sprinkle flour and paprika over vegetables and stir to coat.

Add tomato paste and stir to coat. Then add potatoes, green beans, bay leaves, thyme, rosemary, sage, and vegetable stock. Mix well.

Bring the stew to a boil over high heat, then cover with a lid and reduce to a simmer.

Simmer for 20 - 30 minutes stirring occasionally.

When all the vegetables are tender, add the chickpeas and parsley.

Cover and simmer for another 5 minutes.

Add Himalayan pink salt and pepper to taste.

*I recommend using a high quality, organic olive oil because some inexpensive brands use substitute ingredients

**You can substitute ground sage in place of dried sage
