Best Salad Base Recipe ~
While I can buy a bag of premixed salad, I always prefer to make my own salad base, then add whatever I want to it. In fact, I make a large salad base every Sunday and this is the one we like the best. Preparing this salad base requires less than 30 min of my time and it provides enough for my husband and I to both enjoy salad every day for an entire week! Each day we add whatever we want to it, giving us a different salad so we never get bored.
Ingredients:
2 romaine lettuce hearts
1 package (142g) spinach
1 small bunch of kale leaves (about 10 leaves in total)
4-5 green onions
Directions:
Wash, pat dry, and thinly slice all ingredients (be sure to remove the inner stem from the kale leaves).
Put everything into a large bowl and toss.
Store covered in the fridge for up to one week.
Enjoy this salad as is or use it as a base, adding anything else you want to it right before eating. The possibilities of what you can add are endless....try hard-boiled eggs, leftover chicken breast or leftover salmon fillet. Hemp hearts, pumpkin seeds, sunflower seeds, or chopped walnuts. Fresh herbs, avocado, broccoli, cauliflower, carrots, cucumbers, mushrooms, radishes, or tomatoes. Top with this Easy Vinaigrette recipe. Enjoy!
Tip: Add your dressing, vinaigrette, or other yummies to your salad either right before or the morning of the day you're going to eat it. It helps keep the greens fresher, longer. And if you aren't already making your own dressing or vinaigrette, it's time to start! It's ridiculously easy to do and eliminates the added sugar, sodium, and preservatives found in the pre-made ones you buy at store.
