Chickpea Salad ~


This Chickpea Salad is delicious and refreshing. It's full of protein and incredibly easy to make. Besides being a fantastic source of protein, chickpeas boast many health benefits including being a great source of fibre and vitamins. Enjoy this Chickpea Salad on its own or as a side, either way it's a great addition to your meal plans!




2 cups chickpeas*

2 cups of diced cucumbers (about one large cucumber)

1 red or orange pepper, diced

1/2 cup red onion, minced

2 Tbsp fresh parsley, finely minced





1 Tbsp olive oil**

2 Tbsp fresh lemon juice

1/2 tsp Himalayan pink salt

Fresh ground pepper to taste


Put all ingredients in a small bowl and whisk together.





In a medium bowl add all salad ingredients.

Drizzle the dressing over top and gently mix everything together.


Keep in fridge up to 3 days.

*If you are using dry chickpeas, measure the 2 cups after they've been cooked. If you're using canned chickpeas, be sure to drain and rinse very well.

**I recommend using a high quality, organic olive oil because some inexpensive brands use substitute ingredients.
