Chickpea Salad ~
This Chickpea Salad is refreshing, full of protein, and quick and easy to make. Chickpeas boast many health benefits besides being a fantastic source of protein. They're also a great source of fibre and vitamins, and they contain tryptophan. Tryptophan is an essential amino acid which benefits us in many ways. It's most commonly known for making us feel sleepy and it does in fact help induce feelings of calm and sleep. Thus, adding chickpeas to your diet in the evening could help you to fall asleep easier.

*If you are using dry chickpeas, measure the 2 cups after they've been cooked. If you're using canned chickpeas, be sure to drain and rinse very well.
**I recommend using a high quality, organic olive oil because some inexpensive brands use substitute ingredients.
