I love the comfort of banana bread. However, I don't love all of the ingredients in traditional banana bread recipes. After discovering this amazing Healthier Banana Bread recipe, I knew I had to share it. Even with the healthier ingredients, this banana bread is super moist, delicious, and still has all the comfort of traditional banana bread. It's definitely worth a try!

 

Ingredients:

1/3 cup coconut oil, melted

1/2 cup honey

2 eggs

1 cup ripe bananas, mashed (about 2 large bananas)

1/4 cup unsweetened almond milk

1 tsp baking soda

1 tsp pure vanilla extract

1/2 tsp Himalayan pink salt

1/3 tsp cinnamon

1 3/4 cups gluten-free flour*

Optional add-in's: 1/2 cup of one of more ~ chopped walnuts, chopped pecans, chopped dates, raisins, or fresh blueberries

 

Directions:

Preheat oven to 325 degrees.

Line a 9 x 5-inch loaf pan with parchment paper.

Measure almond milk first and set aside (if it's been in the fridge) so that it's not so chilled.

In a large bowl, whisk together the coconut oil and honey.

Add the eggs and beat well.

Whisk in the bananas and almond milk. If the coconut oil solidifies from the cold ingredients, let the bowl rest in a warm place for a few minutes, like on top of your stove. Alternatively, you can warm it up in the microwave for about 10 seconds. By measuring and leaving out the almond milk first, I've never had this issue.

Next, add the baking soda, vanilla extract, salt, and cinnamon. Whisk together to blend.

Stir in the flour with large spatula until just combined. (Some lumps are OK.)

If you’re adding any of the optional add-ins, gently fold them in.

Pour the batter into prepared loaf pan.

Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.

Allow the bread cool in the loaf pan for about 10 minutes, then transfer the loaf to a wire rack to cool for 20 minutes more before slicing.

 

* I use Bob's Old Mill Gluten-Free 1 to 1 Baking Flour for this recipe
