Butternut Squash, Kale and Quinoa ~
I know you're super busy and it's so easy to order in dinner or grab take-out on the way home from work. However, even with your already busy schedule, you can enjoy a healthy meal made with real food that tastes great. This Butternut Squash, Kale and Quinoa dish is one of them.
By using (organic in our house) frozen veggies that are already washed and cut, all you have to prep is the green onions and garlic. This is a huge time-saver, as is having the quinoa is already cooked. I often make a batch of quinoa on my food prep day so that I can easily add it to dishes like this one. With these time-saving things you can whip this up in less than 20min!
This dish is delicious on its own or for an added vegetable, top on a bed of cauliflower rice.
Ingredients:
1 Tbsp avocado oil
3 green onions, finely sliced
2 cups each, frozen kale and frozen butternut squash
1 clove garlic, mined
1 cup (already cooked) quinoa*
Himalayan pink salt and fresh ground pepper to taste
Directions:
Place large skillet over med-high heat.
Add avocado oil and green onions. Cook onions for 2-3min or until they turn bright green.
Next add the frozen kale and butternut squash. Gently mix all the ingredients in skillet and cover with a tight fitting lid.
Allow to cook (covered) for 5min, removing lid occasionally and gently mixing with rubber spatula.
Add the garlic and cooked quinoa. Gently mix again with the rubber spatula so that all ingredients are well combined. Cover with lid.
Leave for 3min or until the quinoa is heated through. The butternut squash should be tender, not soggy.
Add salt and fresh ground pepper to taste. Enjoy!
* To add more flavor to the quinoa, I like to use homemade Vegetable Stock in place of water when cooking.
