I discovered the original recipe for this salad when I was doing a gut cleanse. I changed a few of the ingredients to suit the type of cleanse I was doing and found this salad to be crunchy, full of flavour and very satisfying! It's a favorite in our house and we enjoy it often. Even more than it's incredible taste, I love its health benefits! The 3 main ingredients; broccoli, cauliflower and kale, all belong to the cancer-fighting cruciferous family of vegetables. Not only that, they're all anti-inflammatory, antioxidant-rich, and high in vitamins C and K. The zesty dressing gives this salad its incredible flavour and the vegetables won't get soggy as they marinate in it. In fact, this salad tastes even better the day after it's been made.

SALAD:

1 head of broccoli, chopped into small pieces (about 2 1/2 cups)

1/2 a head of cauliflower, chopped into small pieces (about 2 cups)

4 kale leaves, inner stem removed and thinly chopped

2 carrots, shredded

1/2 cup fresh parsley leaves, finely chopped

1/4 - 1/2 cup walnuts, chopped

DRESSING:

3 Tbsp olive oil*

2 Tbsp lemon juice and 1/2 tsp of zest

1/2 tsp raw, natural honey

1/2 tsp dried oregano

1 inch ginger, peeled and grated

DIRECTIONS:

In a small bowl, whisk together all the ingredients for the dressing and set aside.

Add all salad ingredients to a large bowl and gently mix together.

Pour dressing over top and toss well until everything is lightly coated.

Store in a sealed container in the fridge for up to 3 days.

 

*I recommend using a high quality, organic olive oil because some inexpensive brands use substitute ingredients
