Turning cauliflower into 'rice' is incredibly easy and once made, it's incredibly versatile. I like to make a big batch of this on my food prep day to keep in the fridge and heat up when needed throughout the week.
Ingredients:
1 head of cauliflower
2 Tbsp avocado oil
Directions:
Preheat oven to 350 degrees F.
Wash cauliflower and cut into pieces.
Place pieces in food processor or blender and pulse for a few seconds until you have cauliflower that looks like rice.
Place on a cookie sheet lined with parchment paper and drizzle avocado oil over top. Be sure to evenly spread the rice out to ensure even cooking. Place in oven.
After 10 min, use a spatula to move the rice around. Spread evenly on the cookie sheet once again and then place it back in the oven for about 10 min.
Watch it carefully so it doesn't burn and remove from oven once it just starts to brown.
Serve on its own or add something to it, either way this rice is delicious!
TIP: You can also saute the rice in a pan if you prefer not to bake it in the oven. It takes about 10 min to cook it this way, depending on how much you like it cooked.
