Sometimes I just feel like a bowl of oatmeal. One bowl of this quick and easy Blueberry Coconut Oatmeal satisfies that craving and fills me up with loads of goodness. It's made with ingredients that are high in fiber, antioxidants, fatty acids, minerals, vitamins, and protein. Quick, easy, nutritious and delicious - I love it!   

 

Ingredients:

 

1 cup water

1/8 tsp Himalayan Pink Salt

1/2 cup rolled oats*

1 Tbsp coconut oil

3 Tbsp frozen blueberries

1 tsp each, hemp seeds and chia seeds

Shredded, unsweetened coconut and pumpkin seeds for topping

 

Directions:

 

Add water and salt to a small saucepan and bring to a boil over high heat.

When water begins to boil, add rolled oats and cover with a tight fitting lid.

Reduce heat to simmer for 6 - 8min or until all the water has been absorbed, stirring occasionally.

While the oats are cooking, add frozen blueberries, coconut oil, hemp seeds, and chia seeds to a bowl.

Once the oatmeal is fully cooked, add it the bowl containing the other ingredients and stir until the coconut oil is completely melted, about 1min. During this time the blueberries will also unthaw.

Top with a sprinkle of shredded coconut and pumpkin seeds and enjoy!

 

*Use gluten-free oats for your Blueberry Coconut Oatmeal if you have a gluten sensitivity as most oats are not guaranteed to be 100% GF.  Oats are often manufactured in the same facilities as wheat products.
